There are hundreds of ways to prepare egg. Someone somewhere could be familiar with 5 methods, maybe I know 10 or Google has 100, no one is an island of knowledge. So, I did my research on egg recipes and found loads of them but as food is, some ingredients at arm-reach, others at distant places thus, not all the recipes I found can be useful to me nor my local environment. This post contains 15 amazing egg recipes you definitely want to try if you’re in Nigeria, Africa because the ingredients are readily available for you. 1. EGG WITH SOLDIERS
Ingredients: Eggs, toast strips, salt and pepper.
Direction: Place eggs in a saucepan of boiling water, then cook over low heat, 4 to 5 minutes; drain. Slice off the tops and season with salt and pepper. Serve with toast strips.
To prepare toast strips, you need; Slices of bread, melted butter, cinnamon, sugar and nutmeg. Heat oven, mix sugar, nutmeg and cinnamon in a small bowl, cut ices into about four pieces, dip strips into melted butter and then into sugar-cinnamon mix, set in oven and bake for 3-5minutes.
2. BASIC OMELETTE
Direction: Whisk egg and salt. Heat and grease non-sticky skillet. Pour egg to occupy all sides of the skillet. Leave to sit for about 2-3 minutes. Flip and fold. Serve and garnish with vegetables.
3. PEAK OMELETTE
Sometimes late last year, I participated in the pecademo contest and got a set of pot by preparing this recipe. You should try it. Its one of the richest egg recipes I’ve had.
1 Tin Peak Evaporated Milk, Eggs, Onion, Tomatoes, Peppers, Butter (or Oil), Salt to taste.
1. Crack eggs into a bowl and add peak evaporated milk. Whisk well.
2. Heat up butter in a frying pan. Fry onions, tomatoes and peppers over medium heat.

4. EGG SNACK
This recipe is the perfect snack for your family. Just top with any beverage.
Ingredient: Eggs, Onion, Tomatoes, Peppers, Butter (or Oil), Salt to taste, little seasoning if desired.
5. EGG NOODLE SOUP
This one is for you if you love eggs, love drinking soup and love noodles.
Ingredients: salt, noodles, chicken broth, ginger, garlic, soy sauce, carrots, oil, eggs and scallions.
Direction: In a large pot over high heat, bring 6 cups salted water to a boil. Add noodles and cook for 3 minutes. Drain noodles and set aside. Rinse pot. Continue here
6. BASIC SCRAMBLE
Direction: Whisk eggs with milk or cream; season with salt and pepper. Melt butter in a small nonstick skillet over medium-high heat; add the eggs and stir until just set.
7. SPICY SCRAMBLE
Make Basic Scramble; add diced chilli pepper to taste.
8. POACHED EGG
Bring a skillet of water with a splash of vinegar to a simmer. Crack eggs into individual cups, slip into the water and poach until the whites set. Remove with a slotted spoon.

Egg custard is one yummy recipe I learnt to make while I was in high school. It is one nourishing protein recipe for people of all age.
Ingredients: Eggs, sugar, vanilla, nutmeg and salt.
12. PLANTAIN FRITTATA
This is one recipe I know my friend, Anothermuslimahkitchen loves.
Ingredients: plantain, eggs, carrot, red bell pepper, green beans, spring onions, green bell pepper, onion, sausage, fish, seasoning, salt and vegetable oil for frying
13. CLASSIC DEVILED EGG

Ingredients: Egg, mayonnaise, paprika, hotsauce, mustard, salt and black pepper.
14. EGG FRIED RICE
Ingredients: Rice, eggs, green pepper, green pea, spring onions, onions, garlic and ginger paste, vegetable oil, stock cube, salt.
15. NIGERIAN EGG NOODLES
Ingredients: 140g noodle, 2 eggs, 2 medium size tomatoes, 1 small onion, 1 small green bell pepper, 3-4 scotch bonnet, Noodle seasonings, 1 tsp vegetable oil.
Direction: Chop tomatoes, onions and peppers.
In a pot, boil 2cups of water. Pour the noodles and the seasonings. Leave to cook for 4minutes or until liquid is almost completely dried. Whisk eggs, pour into noodles and stir evenly. Cover pot and leave to simmer for 1 minute.
TIP FOR UNSHELLING EGG:
For you to stop losing half of the egg white (albumen) of a hard boiled egg, place egg(s) in water inside a skillet or pot, add 1/2 teaspoon of salt and boil. Remove egg from hot water, put into cold water and unshell easily.
